Alkaline Desserts: Macademia-Almond-Cream with Fresh Cherries
This recipe is outstanding, because it's never easy to make a truly alkaline dessert. But almonds are of course alkaline, and Macademia nuts quite neutral, so they go along very well. The cream tastes so fresh and creamy, yet is very light and absolutely tasty. The use of Stevia, the only real alkaline sweetener, should be preferred over other sweeteners. Use fresh cherries, more alkaline are the red ones than the black ones.
To make it your favorite alkaline taste bud sensation, choose whatever fruits you like, but remember: any fruits are great and healthy - yet if you want to follow the alkaline diet 100%, you have to check each fruit's pH value according to a proper Acid-Alkaline Foods Chart. As we want to avoid any dairy products in our alkaline recipes, we use freshly made almond milk for our cream (see here for how to make Fresh Almond Milk).
Use alkaline water, or at least good structured water, to soak Macademia nuts and almonds for at least 12 hours.
Use a blender, and blend soaked nuts together with Stevia, almond milk and vanilla powder to a fine and smooth texture. Add a little more almond milk if desired.
Put into the fridge for at least three hours and serve with fresh cherries.
Tip: Instead of fresh cherries, use black (or better: red) currants or passion fruit - both fruits are quite neutral regarding their acid-alkaline balance. Grapefruit is another great alkaline fruit which goes very well with the Macademia-Almond cream, one of our favorite alkaline dessert recipes!
