Alkaline Main Dishes: Italian Leek-Fry
Leek is a wonderful alkaline ingredient for many recipes - we have a truly delicious one here: leek-stew.
With its fine onion-like aroma leek is great add-on for many alkaline recipes, but also for preparing vegetable stocks. It has a great amount of poly-unsaturated fats and contains a lot of Vitamin C.
Above that, leek is a rich source of iron, magnesium, phosphorus and potassium.
Heat up oil in a medium sized pan and lightly brown onions.
Add zucchini and leek and cook for 3-4 minutes while stirring.
Add water, cover pan, reduce to low heat and simmer for approx. 10 minutes.
Put tomatoes into the pan and season with pepper and curry and cook (covered) another 10 minutes.
Shortly before the fry is done, season with salt and parsley, and add cheese right before you serve.
Tip: Serve with fresh alkaline bread!
