Alkaline Salad Recipes: Pomegranate-Carrot-Fennel Salad
This is a great alkaline salad recipe, and really healthy and nutritious
Fennel is a rich source of Vitamin C and manganese, as well as loads of alkaline minerals such as calcium and phosphorus.
As you may know, carrots contain huge amounts of beta carotene (good for your eyes!), and the ever "exciting" fruit pomegranate is an alkaline powerhouse: with its strong antioxidant properties it neutralizes free radicals and is a rich source of potassium.
So enjoy this quick and healty alkaline salad as main or as side dish.
Cut pomegranate on the outside and get out flesh and seeds.
In a salad bowl mix 1 ½ tbsp lemon jucie, orange juice, and oil with salt and pepper. Add pomegranate and carrots and mix well.
In a separate bowl, mix fennel with remaining lemon juice, 2 tbsp water and a little salt.
Now combine everything, arrange on plates and enjoy!
Tip: Garnish with pistachios!
