Alkaline Main Dishes: Spelt Pasta with Zucchini & Eggplant
Many of you love pasta - so do we! Yet "normal" white flour pasta is not alkaline at all (in fact while being on a alkaline pH diet you should avoid all white flour products such as rolls, muffins, donuts, white bread etc.). Therefore we love to go with alkaline spelt pasta (available in good grocery stores), and make them alongside our favorite tomato sauces.
Today we add sun dried tomatoes, zucchini and eggplant, which are rich in alkaline minerals and taste wonderful - the eggplants taste even a bit like mushrooms. Season with fine herbs, and ready is a great and filling dish for any time of your alkaline year...
In a large pan heat up oil over medium heat and fry onion, garlic and eggplant 8-10 minutes, stirring constantly.
Add zucchini, both kind of tomatoes and oregano and cook for another 6-8 minutes while stirring occasionally.
Meanwhile heat up water and cook pasta firm to the bite.
Add vegetable broth to the pan, and season with dried basil, salt and fresh pepper. Cover and let it simmer for a few minutes.
Serve pasta sauce over the pasta and enjoy this great alkaline recipe.
Tip: Garnish with fresh basil leaves. Only use best cold pressed olive oil. For the past sauce we use a splash of agave or apple syrup for a little sweetness, not sugar.
