Alkaline Soup Recipes: Chilled Parsley-Gazpacho with Lime & Cucumber
Gazpacho differently: alkaline, cooling, delicious, with fresh herbs, lime, cucumber and avocado. Truly yummieh and one of our favorite balance pH diet recipes. Great for kids also, very refreshing on hot days.
Parsley is a great alkaline herb which is good for your immune system, and contains a lot of antioxidants and Vitamin C, and it even has anti-inflammatory properties. Avocado makes is creamy and gives great taste.
In a pan heat up olive oil and sauté onions and garlic until translucent. Set aside to cool down.
Use a large blender and blend parsley, avocado, tomatoes, cucumber, vegetable broth, lime juice and onion-garlic mix until smooth. Add some water if desired, and season with cayenne pepper, paprika powder, oregano, salt and pepper.
Blend again and put in the fridge for at least 1,5 hours.
Tip: Add chives or dill to the gazpacho.
