Soups: Swiss Cauliflower-Emmenthal-Soup
Are you on a diet and still feel tired and exhausted? You just can't lose that stubborn fat? The reason for that might be high acidity levels and too many metabolic waste products. Our alkaline recipes help to restore your acid-alkaline balance, which will bring you back on track to losing substantial amounts of weight.
This alkaline soup recipe may not be 100% alkaline (as you know, dairy protein is acid forming, but small amounts are ok), but it is as delicious as it gets! Above that, cauliflower possesses a high nutritional density as it is rich in dietary fiber, foliate and Vitamin C - alkaline cauliflower may even lower the risk of prostate cancer!
Ingredients for 2 servings
2 cups cauliflower pieces
1 cup potatoes, cubed
2 cups vegetables stock (yeast-free)
3 tbsp Swiss Emmenthal cheese, cubed
2 tbsp fresh chives
1 tbsp pumpkin seeds
1 pinch of nutmeg and cayenne pepper
Cook cauliflower and potato in vegetable stock until tender and puree with a blender.
Season the soup with nutmeg and cayenne, and maybe a bit salt and pepper.
Add emmenthal cheese and chives and stir a few minutes until the soup is smooth and ready to serve.
Garnish with pumpkin seeds.
