Soups: Alkaline Carrot Soup with Millet

Alkalizing Carrot Soup

Ingredients for 2 portions

2 lb. carrots (32 oz.)
2 oz. ground millet
4 cups (1 quart) yeast-free veggie broth
2 yellow onions
1 tbsp. cold pressed extra virgin olive oil
1 pinch of sea salt
1 pinch of cayenne pepper
1 handful of fresh parsley and chives
1 clove


Directions:

Chop the onions in small pieces and the carrots in thin slices.

Then heat some oil in a pot, add the onions and stir-fry for a couple of minutes.

Then add the carrots as well as the millet and stir-fry for another 10 minutes on low heat.

Next, add the veggie broth, some clove (be careful with the clove, don't add too much), and some salt and pepper.

Cook until the carrots are tender (around 20-30 minutes).

Then puree with a hand-held blender, season once more with salt and pepper, pour the soup in a bowl and garnish with chives and parsley.

Enjoy this simple but very delicious alkaline carrot soup!
