Alkaline Soup Recipes: Carrot Soup with Fresh Mushrooms
Carrots are a rich source of B-vitamins and can be eaten raw or cooked together with any alkaline meal!
Carrots contain a lot of important minerals, such calcium, iron, magnesium, potassium, and zinc. Mushrooms neutralize acids inside your stomach.
Wash and peel carrots and potatoes and dice them.
Heat up vegetable stock in a pot on medium heat and cook carrots and potatoes for about 15 minutes.
In the meantime finely cube onion and braise them in a pan with olive oil for about 3 minutes.
Wash mushrooms, cut them to desired size and add to the pan, cooking approx. another 5 minutes, stirring occasionally.
Using an immersion blender puree carrots, vegetable stock and potatoes, and put content of the pan into pot.
When almost done, season with parsley, salt and pepper and serve hot.
