Alkaline Main Dishes: Beetroot Stir-Fry
Beetroot is a healthy vegetable, as it contains high amounts of Vitamin B, Iron, potassium and folic acid (therefore especially good for pregnant woman).
Furthermore, because beetroot is also rich in nitrates it has performance-enhancing effects.
Eat as a healthy alkalizing side dish or serve with potatoes as a main dish.
Wash the beetroots, peel them and cut in half, then cut into thin slices.
Put olive oil in a pan, heat up and simmer gently beetroot and rosmary for about 10 minutes (close lid), stirring occasionally.
Put leeks into the pan, stir, add 3 tbsp of water, close lid and cook another 6-8 minutes until leek is almost done.
Add parsley and chives, stir well, and season with salt and pepper.
Tip: Serve with fresh waxy potatoes!
